Preparation tips
1. Peel the onions and wash the peppers and tomatoes. Cut these three vegetables separately into small 1cm cubes.
2. Pour a drizzle of olive oil into a large frying pan and first brown the onions, then when they are transparent, add the tomatoes and peppers. Salt, pepper and add the Mexican spices, measure according to your taste and cook over low heat, covered, for 15 minutes.
3. Meanwhile, cut the chicken into cubes. Add them to the pepper-tomato mixture, add salt and cook for another 7 minutes, covered.
4. Cut the avocado into strips. Grate the cheddar using a grater or peeler.
5. When the vegetable-chicken mixture is cooked, distribute the mixture over the wraps, add cheddar to each wrap and close them. Heat them for 1 minute in the microwave to melt the cheese (optional).
6. Then add the avocado slices and enjoy
